Ohio Vineyard Makes Honey of a Wine

Here is a toast to Jilbert Winery, which does business in Valley City in Medina County and is one of several wineries in a burgeoning industry in Northeast Ohio.
The boutique winery specializes in the production of a novel product known as honey wine, and is one of only a few wineries in the nation that produces it.
Honey wine is made with wildflower honey collected on the Jilbert family farm in Valley City.
The unusual wine has been part of Jilbert’s inventory since 2005, offering a honey and fruity taste with a golden color. It has an alcoholic content of 11 percent and is best served slightly chilled.
The Jilbert family estate includes the historic and picturesque Jilbert house, built in 1913. Visitors can experience the winery housed in a historic dairy barn built in 1905.
In addition, the estate includes an apiary, honey extraction house, wine manufacturing and bottling area, tasting room, gift shop, and a patio restaurant known as The Grill at Jhelbare, used in the summer months.
A renovation of the second floor of the dairy barn created a dining room refurbished to its original state and home to a chef’s table menu complete with locally produced grain-fed beef, pork and/or chicken entrees accompanied by sauces and glazes infused with the vineyard’s wine.
